Shaved Asparagus Salad

It’s asparagus season and we think you should be eating these little spears everyday! Asparagus is packed full of fiber, antioxidants and B vitamins! Raw asparagus is especially nutritious. Make sure to use high quality asparagus when eating it raw. You can find green asparagus at C2ToTable in the center circle and purple passion asparagus at Cochise Family Farm in pavilion 4! Both of these farmers are at the Sunday Rillito Park Farmers Market. Shop local and get cooking!

INGREDIENTS

  • 1 lb asparagus, shaved 
  • Lemon zest from 1 lemon
  • 1 tbsp lemon juice
  • 1/3 cup chopped pistachios (optional)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Use a vegetable peeler to pull straight down to the tip of the asparagus to make long ribbons. Combine asparagus ribbons with lemon juice, lemon zest, oil, salt and pepper. Toss to combine. Taste and adjust flavors as needed. Enjoy!
