Rainbow Root Veggie Salad

SERVINGS: 4-6

INGREDIENTS

  • 1 medium beet (or 3-4 small beets), shredded or finely chopped
  • 3 medium carrots, shredded or finely chopped
  • 1 medium turnip (or 3-4 small turnips), shredded or finely chopped
  • 1 bunch greens of choice, julienned (optional)
  • 1 bunch of green onions, finely chopped
  • 1 bunch fresh herbs of choice, finely chopped (parsley or cilantro work well)

DRESSING 

  • 3 tbsp olive oil
  • 2 tbsp vinegar of choice
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • Salt and pepper, to taste

Add all prepared vegetables to a medium bowl and set aside.

Using a whisk, mix together all of the dressing ingredients in a small bowl. Pour over the salad and toss to combine. Taste and adjust flavors as needed. Serve immediately.
