Lion’s Mane Taco “Meat”

INGREDIENTS
- 2 tbsp olive oil
- 1/2 onion, thinly sliced
- 2 large chunks of Lion’s Mane Mushroom, shredded (other mushrooms will great here too!)
- 1 pepper of choice (mild or hot), thinly sliced
- 2-3 garlic cloves, peeled and minced
- 1 tsp chili powder (you can also use your favorite taco seasoning instead of the next three spices)
- 1 tsp cumin
- ½ tsp coriander powder
- ½ tsp dried oregano
- salt and pepper to taste
Heat oil in a medium pan, add onion and cook until onions are translucent. Add mushrooms, peppers and garlic, cook until the vegetables start to soften. Add seasonings, herbs, and salt and pepper. Cook for a few more minutes or until mushrooms are tender (your desired consistency). Taste and adjust flavors.
Optionally, you can transfer the “meat” to a parchment lined baking sheet and bake at 400 degrees, until the meat becomes a little crispy.
Serve with desired condiments in a taco shell, burrito or in nachos! Enjoy!
