Dates are nature’s candy and if you are looking for a healthy sweet treat this holiday season, this date caramel will hit the spot. Dates are high in dietary fiber and potassium, making them the perfect anti-inflammatory snack. This date caramel is delicious with apples or mixed into ice cream or oatmeal. Healthy diets can consist of sweet treats, just stick with whole natural foods.
- 20 large pitted dates (if not soft and sticky, soak in hot water for 10 minute then drain)
- 1 tsp vanilla extract (optional)
- Warm water to thin
- Pinch of salt
Remove the pits from the dates. If the dates are not soft, place them in a bowl with hot water for 10 minutes or until dates are soft and sticky. Place dates in a food processor or high speed blender with a little warm water and all other ingredients. Process until completely smooth, adding water if it seems too thick. Enjoy!
