Lemon Chive Angel Hair Pasta w/Salmon

  • 12 oz. Pappardelle’s Lemon Chive Angel Hair Pasta
  • 1/2 lb. Salmon from White Cane Sockeye Salmon
  • 4 Tablespoons Butter
  • 2 Tablespoons of Meyer Lemon Olive Oil from Local Southwest or Sogno Toscano
  • 2 Cloves of Garlic, Smashed & Finely Chopped
  • 3 Green Onions, Finely Chopped
  • 3-4 Leaves of Fresh Cilantro & Dill
  • 2/3 Cup of Half and Half
  • Salt and Ground Pepper, To Taste
  • 1/2 Cup Freshly Grated Parmesan Cheese

Rub Salmon with lemon olive oil for 5-10 minutes. Place salmon on grill for 5-8 minutes until cooked through. Melt butter in a large skillet. Add the green onions, garlic & herbs, cooking for 3-4 minutes. Stir in cream and heat gently, sprinkle parmesan cheese to melt. Meanwhile, bring salted water to boil, cook pasta 6-8 minutes. Drain and add to sauce in the skillet, mix well. Plate pasta, sauce and grilled salmon, sprinkle with last of parmesan cheese with salt & ground pepper to taste.
