Peaches and Cream Popsicles
- 1.25 cups full fat coconut milk or raw milk
- 1/4 cup raw honey
- 1/2 teaspoon ground cinnamon
- 1 teaspoon orange zest
- 3-4 ripe peaches, peeled, pitted, and diced
Add milk, honey, cinnamon, and orange zest to a blender. Blend the mixture for about 30 seconds, until it is smooth. Pour the milk mixture into a liquid measuring cup and rinse the blender. Add the diced peaches to the blender. Pulse the peaches in the blender, just until they turn into a slightly chunky puree. Add a tablespoon of peach puree to each popsicle mold. Pour the milk mixture on top of the puree, leaving 1/2” of free space at the top of each mold. Top each popsicle off with another 1/2 tablespoon or so of peach puree. Place a popsicle stick in each mold and freeze the popsicles in the freezer for 6-8 hours. Enjoy!
