Farmers Market Frittata

Try this quick and easy frittata for dinner or a weekend brunch! It’s packed full of protein, healthy fats, and iron. INGREDIENTS

  • 1/2 red onion, finely chopped
  • 2 cups fresh spinach
  • 8 oz bag mushrooms, any variety, chopped or shredded
  • 6 eggs
  • 2 tbsp olive oil
  • Salt and pepper
  • 1 tsp garlic powder
Preheat the oven to 350 degrees. In a cast iron pan (or any oven safe pan), heat olive oil. Add the onions and cook until tender. Add the spinach and mushrooms. Cook for an additional 2-3 minutes and remove from the heat. In a medium bowl, scramble eggs with salt, pepper, and garlic powder. Pour scrambled eggs over sauteed veggies and stir to combine. Bake at 350 degrees for 12-15 min (until eggs are set). Enjoy with a side salad or roasted potatoes.
