Sunshine Citrus Salad

SERVINGS: 4-6

INGREDIENTS

  • 1 bunch of lettuce of choice, chopped
  • 1 bunch kale, strip from stem and chop
  • 4 oranges of choice (Navel, Sweet AZ and Blood oranges work well), peeled and chopped
  • 1 pink or red grapefruit, peeled and chopped
  • 1/2 cup scallions or green onions, chopped
  • 1/2 bag Better Than Provisions Granola
  • 1 bunch fresh mint

DRESSING INGREDIENTS

  • 1/3 cup olive oil
  • 1/3 cup White Balsamic Vinegar
  • 2 tbsp fresh squeezed orange juice
  • 1 clove garlic, grated
  • 1 tsp or more honey
  • A little water to thin if needed
  • Salt and pepper to taste

In a large salad bowl, add the mixed greens, followed by the oranges and grapefruit slices. Add mint and granola, toss to combine. Set aside. Using a whisk, mix together all of the dressing ingredients in a small bowl. Pour over the salad and toss to combine. Serve immediately.
