Roasted Hatch Chile Salsa

While you can buy some super flavorful salsas at the farmers market, making your own with freshly roasted chiles can be a fun and delicious experience! Did you know you can prepare salsa by hand? Just give all the ingredients a good chop, throw them in a bowl and hand mash! If you have a large molcajete (mortar and pestle), even better! The rough texture of a molcajete breaks down the ingredients to enhance the flavors! Now, go buy all the chiles!

SERVINGS: 20

Ingredients

  • 1 lb roasted Hatch green chiles, chopped
  • 2 1/2 cups tomatoes, chopped
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 fresh or roasted jalapeño, chopped (optional)
  • Juice from 1 lime
  • 1/4 cup cilantro, chopped
  • Salt to taste

Chop all the ingredients and place in a large bowl. Put on gloves and use your hands to combine all the ingredients. You can also use a potato masher or pastry blender (or any kitchen mashing tool) if you don’t want to use your hands. Make sure to wear gloves when handling hot peppers! Mash and combine until you reach a desired salsa texture. You can also use a blender or food processor if desired. Taste and adjust flavors as needed. Enjoy!
