Citrus & Arugula Salad

Servings: 2–4 

  • 4 cups arugula
  • 2 oranges, segmented
  • 2 tablespoons fresh orange juice
  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon dijon mustard
  • 2 green onions, chopped
  • Sea salt, to taste
  • Freshly cracked pepper, to taste

Whisk all dressing ingredients together in a small bowl.

Add arugula and orange segments to a salad bowl. Pour the dressing over the salad and toss the ingredients together until the arugula is evenly coated with dressing.
