We are an authentic Italian pizzeria baking pizza in an 800-degree wood-burning oven on wheels. We use imported Neapolitan flour and tomatoes, along with fresh-made fior di latte (fresh mozzarella), fresh basil, and a variety of other toppings, many of which come from the local farmers markets.
Using a natural fermentation process for the dough, the wild yeast starter culture delivers a light crispy yet soft flavor with a wood smoke char to perfection.
