Creamy Bean Spread

This recipe can be served as a dip, or as the base for our Roasted Veggie Sandwich.

MAKES 1 QUART

INGREDIENTS

  • ½ cup dried beans or 1 (15-ounce) can beans, drained and rinsed
  • 2–4 cloves garlic
  • ¼ cup water
  • ¼ cup olive oil
  • Juice of ½ lemon
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Optional: 1 teaspoon curry powder

If using dried beans: Soak beans overnight (about 8 hours). Drain and simmer in fresh salted water for about 1 hour, or until tender. Drain and cool.

To prepare spread: Add beans, garlic, water, olive oil, lemon juice, salt, and pepper to a blender. Blend until smooth and creamy. Taste and adjust seasoning. Add curry powder if desired.

Store in the refrigerator for up to 2 weeks.
